The Cuisine du lien (Cooking Connections) to be held in the Fes medina is an invitation to dig deep into our roots and come up with a universal language. Our roots inform our senses, and over the centuries our senses have been enriched by fragrances, flavours, sounds and colours that reach back into history.
Moroccan cuisine is one of the most varied and sought-after in the world today. Its methods and recipes are thousands of years old and are still studied today. Every new gustatory experience we have reveals a little more of the origins of our taste; each time we put two ingredients together, we get closer to the intimacy of their flavours; the aromas of herbs and spices whet our appetite as we breathe them in.
Moroccan cuisine is exceptional in that it is rooted in both the material and the spiritual. Its dishes are the symbolic food that reveals the very essence of our deepest self and of our culture. The pleasure that it brings bears witness to the connections between our senses and our intuitive knowing.
May this meeting in Fes between Moroccan cuisine and that of other traditions spread out across the world to form a network, a universal connection.
