Palates and Palaces
In his great work on ‘taste’, Pierre Bourdieu showed that beyond its bodily function, taste is also the result of social and cultural conditioning.
Palates do not have a unique experience of flavour. As a result of our cultural diversity, we do not all have the same experience of salty and sweet, raw and cooked.
In the Spirit of Fes, we have invited the world’s cuisines to express themselves in a marvellous palace – that’s with a ‘c’ – in our city: the El Mokri Palace.
Most of the presentations and experiments of the chefs, men and women of different countries and cultures, will take place in this beautiful building, a jewel of Hispanic-Moorish art.
Fes was founded towards the end of the 8 th century and since then has tasted so many other cultures through their cuisines. A unique intercultural flavour will pervade throughout these culinary dialogues in a palace that is so ancient and yet so open to our times and to the future.
